The answer: Maybe. Maybe not.
So I’ve been gluten free for, I don’t know, 10 or 12 years. I was never formally tested through biopsy of the intestines. I was super malnourished for “unknown reasons” as I was eating mostly whole foods, whole wheat or multi grain items and taking a good supplement. I did a modified elimination diet – under the care of my D.O. – and did monthly blood tests. By eliminating gluten products my numbers came up on their own with NO supplementation. Strictly foods. Then we reintegrated some supplements where I was still a bit low. Fast forward to now.
I decided I wanted to try the Gary’s True Grit Einkorn pancakes from Young Living. I completely understand the concept that todays wheat is not the wheat I grew up on (I’m in my 40’s). I personally know a wheat farmer who can attest to this. So I was excited to try Einkorn wheat pancakes to see if my body can handle it.
Sadly no. Last week my husband made pancakes. They taste so good so I’m totally bummed by my body’s reaction. At first I wrote it off that it was the GF Domino’s pizza (we were working in the yard and suddenly it was lunch time! We do NOT do this often). So I tried again yesterday and then again this morning with waffles – using the same Einkorn mix. Well, my bowels are not normal and I have a belly ache. 🙁
I know some people who have celiacs or a gluten intolerance who have had NO PROBLEMS processing this einkorn wheat product. I’m just not one of them. The moral of the story is – we are all different. What works for one person may not work for another. And thats OK! I tell the story not to discourage you NOT to try new things out. I tell the story so you DO try new things! Unless its super detrimental to your physical well-being, like sky diving without a parachute…
My next order will have Gary’s True Grit Gluten Free Pancake & Waffle Mix in it. I have no doubt I’ll be able to process this product with no intestinal issues. Hopefully they taste just as good as the other kind!
